Korean BBQ Chicken (5 servings)
1.125 kg boneless, skinless chicken thighs (was 900g)
2 tsp black pepper (was 1.5 tsp)
1¼ tbsp garlic paste (or approx. 18g)
1¼ tbsp ginger paste (or approx. 18g)
50g gochujang paste (was 40g)
30g sriracha (was 25g)
1¼ tbsp sesame seeds
50ml light soy sauce (was 40ml)
Crunchy Side: Tangy Cucumber Salad
400g cucumber, thinly sliced
1 tsp salt
1 tsp fresh garlic (minced)
15g gochujang
15g honey
30ml rice vinegar
1 tbsp sesame seeds
1 tsp chilli flakes
25ml light soy sauce
Carbs & Extras (Optional Add-ins)
Cooked rice (about 1/2 cup per box)
Soft-boiled eggs
Pickled radish or kimchi
Spring onions or toasted seaweed
How to Make It (Meal Prep Edition)
Step 1: Marinate & Cook the Chicken
Mix all the chicken marinade ingredients in a bowl or large container. Add chicken, coat well, and marinate for at least 30 minutes.
Cook in an air fryer or oven at 200°C (400°F) for 16–18 minutes. Let cool slightly, then slice into strips or chunks.
Step 2: Make the Cucumber Salad
Toss cucumber slices with salt. Let sit for 10 minutes, then drain any excess water.
Mix with garlic, gochujang, honey, rice vinegar, soy sauce, sesame seeds, and chilli flakes. Store in a sealed container in the fridge—it’ll stay crunchy and tasty all week.
Step 3: Pack Your Bento Boxes
Into each box, pack:
A scoop of rice
A few slices of BBQ chicken
A generous spoonful of cucumber salad
Optional extras: soft egg, pickled radish, kimchi, or a sprinkle of sesame seeds
